Fields of saffron


Iran has the status of world champion of saffron, representing about 90% of the world production of saffron. Saffron, widely referred to as "red gold", is a spice derived from the dry stigma of the saffron crocus flower. This precious spice is appreciated for its incomparable quality, fragrance, and coloring propertiesgrass. It takes 140,000 to 500,000 flowers to produce about 2 pounds (1 kg) of saffron.
